Vegan cardamon cookies? It never hurts to try something exotic. Especially not in winter. So here comes the recipe for the vegan version of extremely delicious homemade cardamom cookies.

Ingredients:

  • 2tsp green cardamom seeds • 1 1/4 cups organic flour • 1 cup organic fine semolina wheat • 1 cup organic margarine • 3/4 cup organic cane sugar • 12 almonds, halved
  • Finely ground the cardamom seeds and mix with flour and semolina.
  • Cream margarine and cane sugar. Slowly add the flour-semolina mixture. The dough will be a bit crumbly, but do not add any liquid. Let it sit for half an hour at room temperature (but not too warm).
  • Preheat the oven to 300°F.
  • Press the dough to make sure that it’s firm. Scoop it into 24 balls, flatten them and place half an almond on top. Bake for about 30 minutes (on a baking paper!), until they have a light brown color. Let them cool.
