Coffee + Potatoes = Irresistible cake?

Coffee along with cake is delicious. Coffee in the cake is even tastier. And coffee plus potatoes in the cake is the tastiest thing ever. At least that’s what we think for now, because we tried this incredible coffee walnut cake recipe. You should definitely do the same.

You need:

  • 1 mid-size potato
  • 5 fl oz cold Mount Hagen espresso
  • ½ cup butter
  • 2 cups cane sugar
  • 2 large eggs
  • 1 tsp vanilla powder
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp salt

For the icing:

  • 3 cups powdered sugar
  • 2 tbsp melted butter
  • 1 tbsp cocoa powder
  • 1 tbsp vanilla powder
  • 1 cup chopped walnuts

How it’s done:

Peel and dice potato, boil it, mash it, and set aside.

Cream butter and sugar until fluffy. Add eggs, vanilla, potato, mix well. Add flour with baking powder and salt to the mixture, mix well again. Then, stir in half of the cold espresso.

Cover a normal baking tray with baking paper, spread the dough on it and bake at 357 °F for 25-30 minutes.

In the meantime, prepare the icing: Mix powdered sugar, butter, cocoa, vanilla, and remaining espresso well.

Let the cake cool, then cover it with icing, and sprinkle the chopped walnuts on top.

Brew another coffee – and let the feast begin.
