Quick cookies with coffee.

If you get really stressed during the time leading up to Christmas (like I do) and still really want to have home-baked cookies under the Christmas tree – here are 2 very practical tips for you.

Ready, instant, go

First of all, grab one of our organic instant coffees: Super quick, super tasty – and then secondly, get started with the coffee oat cookies.

Ingredients:

  • 1 ½ cups flour
  • 1 1/4 rolled oats
  • A little less than a tsp of baking soda
  • A little less than a tsp salt
  • 1 tsp cinnamon
  • 1 ½ sticks butter melted
  • ¼ cups brown sugar
  • ½ cup powdered sugar
  • 1 large egg
  • 2 tsp vanilla extract or seeds of 1 vanilla pod
  • A little less than 3 tbsp dissolved Mount Hagen Instant
  • optional ½ cups chopped nuts or raisins or chocolate chips

And this is how it’s done:

Mix flour, rolled oats, baking soda, salt, and cinnamon. Mix the melted butter, sugar, egg, and vanilla in a second bowl, add the Mount Hagen Instant and mix well. Then stir in the flour mixture. If you like, stir in the chopped nuts (you can, but don’t have to). Scoop out little balls with spoon and bake at 360 °F for 10 minutes. Let the cookies sit for 2 minutes and then place them on a rack to cool.

Make coffee. Done!
