Springtime lethargy? Here comes the energy bar with coffee.

It’s that time of year again: Spring is here – and with it, springtime lethargy, which at least makes my energy levels go to zero. So, let’s ring in our own personal energy revolution – with a really delicious recipe for coffee bars. Very easy to make (saving energy and all of that), without sugar, with lots of coffee flavor – maximum energy level included.

What you need:

  • Square baking dish (8×10 inch)
  • Baking paper
  • 2 matching square baking wafers (4×8 inch)
  • 9oz organic dates without stones
  • 7oz dried organic apricots
  • 7ozg organic cashew nuts (you can also use broken cashew nuts)
  • 2oz sugar beet syrup
  • 1 tbsp organic oat flakes and coconut flakes (to taste)
  • 10g Mount Hagen espresso beans
  • (100g melted organic chocolate)

How it’s done:

Preheat the oven to 360°F. Line the tin with baking paper and place the wafers inside next to each other.

Chop the coffee beans in a blender (small pieces, no flour!). Add the dates, apricots, and cashew nuts and chop them as well. Pour in the syrup and mix into a sticky mixture.

Then spread evenly over the wafers, sprinkle the oat flakes on top, and press down a little.

Bake for approx. 12 minutes. Then cut into even bars. If you like, coat them with melted chocolate.

Make coffee and: Power on!
