We have a sweet tooth.

And here is our current favorite – a recipe WITH coffee (can also be enjoyed ALONG WITH coffee): Coffee pudding. And because it is incredibly easy to make the pudding mix yourself you find the recipe for it further below.

INGREDIENTS:
8.5fl oz cold coffee • 8.5fl oz milk (plant milk) • 3tbsp. sugar (or a sugar substitute like e.g. yacon powder) • 1pk pudding mix, vanilla (preferably homemade, you find the recipe further down)

Let’s get started:

Mix coffee and milk and stir in sugar and pudding mix with a whisk. Cook mixture and stir constantly (!) until it comes to full boil. Done! Fill the pudding in a bowl and let it cool.

Recipe for homemade pudding mix:

INGREDIENTS:
1/3 cup starch • 4tsp. sugar or a sugar substitute (powder) of your choice

Mix both ingredients and – if you like – add some flavor like e.g. vanilla pulp or lemon zest. Then, prepare like any pudding mix with 17fl oz of (plant-)milk: Mix pudding powder with a little bit of the milk. Boil the rest of the milk, add the pudding mixture, stir, and bring to full boil. Done!

If you are using plant milk, take a little less than mentioned in the recipe, to prevent it from getting too watery.
