Sun-drying, also known as dry preparation, is the oldest and easiest method of preparing coffee. The berries need to be turned regularly and protected from the midday sun and nighttime humidity. During the day, it is spread out in the sun – and is brought in again at night. This is repeated every day until the residual moisture is approx. 12%, which takes between five and ten days.
