On the one hand, you’ve got the organic, Demeter and Fairtrade seals, which tell you that neither the environment nor the coffee farmers are treated badly.
Then take a good look at the beans. Ideally, they should all be the same size and be evenly roasted. However, make sure you know whether you have a blend (in other words, a mix of different coffee varieties, which may of course look different) or a single origin (one coffee variety).
Whether or not the beans look oily says nothing about their quality. Coffee beans naturally contain many essential oils. During roasting, they begin to seep to the surface (2nd crack), giving the beans a shiny appearance. This is most common with dark roasts, such as French or Italian Roast.
Our coffee is gently refined in drum roasters at just under 400F for approx. 14 minutes. Only this way can its characteristic, opulent aromas unfold in all their glory.
