Quality criteria, noun: Parameters used to assess the quality of a coffee. For coffee beans, these include: Green coffee (cultivation, harvest, processing) and roasting. For the preparation, these include: Coffee bean, storage, grinding level (how finely or coarsely ground the beans are), dosage, water, brewing temperature, time between preparation and consumption and the method of preparation.
