The second life of bread.

Who doesn’t know the following situation: You bought an amazing loaf of bread, but have no time to prepare a sandwich? Or your better half brings home yummy take-out and – just like that – the bread has turned dry. What now?

Throwing it away is not an option.

So, should you make breadcrumbs out of it? Sure, that’s one option. But the clearly more delicious alternative is: French toast. It can be sweet or hearty, is quite easy to prepare, and definitely qualifies for a Sunday morning brunch. It is also perfectly suitable for breakfast in bed. Which also sounds pretty nice.

Here is the recipe (plus an egg-free alternative):

  • 3 eggs
  • 7 fl oz plant or cow milk
  • A pinch of salt
  • 8 slices of dry bread
  • (Plant)butter for cooking


Whisk eggs, milk, and salt in a shallow bowl (or casserole).
Place the bread slices in the egg milk and let them soak. We have not tried this with wholewheat bread, but we assume it would just take a moment longer to soak in the egg mixture.
Melt some butter in a pan. Cook bread slices from both sides for about 5 minutes until golden brown.

You can serve them with fruit, nuts, powdered sugar, or maple syrup. Yummy! Should you be very hungry, you can also gratinate the bread with some cheese. There are limitless variations.

Egg-free alternative:

You can just leave out the eggs – or you soak the bread in banana milk (just whisk the milk with a ripe banana and some salt). That way, the consistency will be closer to the original. But it will of course taste a little sweeter.

No matter how you prepare it: We think French toast is a delicious way to avoid food waste. Now you just need the right coffee to enjoy along with it. But that really shouldn’t be a problem.
