Oatmeal cookies dunked in coffee? The epitome of food for the soul.
And here’s the recipe for the vegan version.

INGREDIENTS:
225g fine oat flakes • 180g cane sugar • 80g spelt flour • 8g baking powder • 8g vanilla extract • 60g applesauce • 180g vegan butter

1. Preheat the oven to 356°F fan.

2. Mix the oats with the cane sugar, spelt flour, baking powder and vanilla extract.

3. Add the applesauce and vegan butter and knead into a dough.

4. Form approx. 18 balls and place on 2-3 baking trays (lined with parchment paper!). Use the palm of your hand to flatten. The thinner the cookies, the crisper they will be.

5. Bake in the oven for approx. 12 minutes. Leave to cool on the tray (if you can wait that long).
